I was driving my 04 libby around 20mph in town today and all of the sudden every warning/indicator light on the dash went on; just as if I turned my keys to start the vehicle. Does anyone have any ideas?

Start with the battery voltage, and load test it. Also have the alternator output checked.

Its a brand new battery, its not the first time I've noticed electrical problems. If the car sits for more than a week it usually wont start. I am convinced that some how the remote start is involved in these electrical issues.

Sounds like you have a drain down (voltage draw) situation. Anything you leave plugged into accessory sockets?
What is the battery voltage after sitting for a week, before you start it?
Got a voltage tester-VOM? After sitting all night with the interior lights turned off at the stalk, unlock with key, open hood and get voltage reading. What is it?
I use a intelligent manual charger and leave it connected when not starting for a week.

I can leave my Libby in the driveway for a week and it's battery won't drain down. Have you modified the wiring any? Like adding an accessory? an aftermarket deck?

You could check the drain on the battery by disconnecting the battery and putting an ammeter in series with the leads. With everything off and the doors closed it should be less than a quarter amp.
