If I am changing my rotors, calipers and pads..........is there anything else anyone recommends I should do since I have that all apart on my 2003 Jeep Liberty ?

take a look at the parking brake while you have it apart, not usually a big deal, but I'd make sure it looks like it isn't just waiting to break on you.

Replace the stainless bits the pads slide on too if they are worn. As Gyro said tgs hoses are definitely worth looking at after 20 years of service, I've been stripping bits of my parts Jeep, it's been off the road for 2 years now, when I took the caliper off I hooked it up out of the way, typically I managed to bump it and it dropped.... the hose snapped where it joins the steel line, it had corroded inside the rubber sleeve that covers the joint! A horrible design that causes corrosion and hides it too.
