Not the mountains.
I don't know about touchscreens being installed but I've seen a number of the larger screen head units installed on Liberties on here. You'll have to search through the threads in the electronics, how-to or in here.

I have done it..easy..you NEED a dremel.

And the Metra bracket of course

Installed an avic 8200 nex..jeep is sold now. Of course I took it out and put a regular avh 4800 bs..which is good as well. Looks the same just doesn't have android auto Apple carplay and built in GPS

You will not find the Metra bracket in that color. I painted it with automotive paint and 2k clear.

Easy to just, just a lot of cutting out unnecessary plastic. 02- and up applies.

When you take the radio out, you'll find a bracket in the middle. Cut that out and you'll get the rest when you start cutting..it all comes once you start.

I did a similar Pioneer head unit - the AVH3600BHS. Works well, has all the Pioneer apps including Dash Command for monitoring the KJ via the onboard computer, mapping apps, music and entertainment, bluetooth, blah blah blah.

To piggyback on what Teeje said, here's a pic of what gets cut out. You can see the remnants of the bracket that held the factory radio:
